I think many of our submissions are getting rejected due to the wrong category chosen.

I think this is something that people quickly do and forget the impact that it has.

It's quite tricky thinking of the various category's that different sites use. i.e. do they use "Internet & Computers" or "Technology" or "Software & Hardware", etc. Even with masks it's tricky! 

Would it be possible to scrape the list of categories from the sites when SER scrapes the site and then output to a file for each project?

This way, we can see exactly what categories all the various projects are coming up with and we can optimise this part so that submissions are not rejected due to wrong categories.
