Can anybody teach me/show/guide me on how to properly set up/configure the settings properly in SER, when starting a new one? Hoping someone would reply, thanks!

You can actually clone the exact project or you can bulk delete and replace with content. I automate whole content generation with gsa content gen and with catchall emails you don't have to worry. Just make sure to delete cache once in a while to reset already prased history links.
