SEO and Updating: Tables vs. CSS

Good day or evening or morning or whenever, GSA users. :)

I'm trying to update an old site. It was built off the fourth framework for a site I ever created. So it uses tables.

Are tables bad in terms of SEO?

What would Google rather see: CSS or tables?

Would a CSS-generated side-menu not stretch across the screen and break one of Google's newest directives in terms of improving user experience, the Cumulative Layout Shift (CLS)?

I vote for CSS. And it's not that hard as you may think: https://web.dev/one-line-layouts/

Your vote is meaningful. Thanks for your input, Sven.
Also, many thanks for the link with incredibly useful info! I didn't know of these CSS flex and grid options! How long have these existed?!
