So I searched a keyword the first time around, and that goes fast and gets websites.  

Then I noticed if I run it a second day,  it moves slow and doesn't come up with as many results. 

What would be the difference between the first run and second run on speed and results? 

Also, does it matter if I run 10 or 20 threads on scraping?

    speed highly depends on the proxies you use (if any at all). The more proxies (and not banned of course) the faster it gets.

    Why the difference of speed running the first day vs. the second day using the same amount of rotating good proxies?

    maybe the first day you got trough all the pages from the engines that do not block you fast, later you get blocked and only a few results appear.

    I can only guess without details.
